Serves 4

three tablespoons garlic rice bran oil

250 g (9 oz) hen thighs, dicedย

2 tablespoons vegetable inventory

2 tablespoons hen inventory

200 g (7 oz) rice noodles

1 tablespoon rice bran oil

250 g (9 oz) herbed halloumi cheese, sliced

Four giant handfuls child spinach leaves, to serve

1 tablespoon sesame seeds

Methodology

Warmth the garlic oil in a big stockpot over a medium warmth and fry the hen thighs till browned.ย 

Add the spring onions, bok choy and mushrooms, cut back the warmth to low and prepare dinner gently till simply wilted to permit the flavours to infuse.

Add 750 ml (three cups) water, or sufficient to submerge the hen and greens. Add the vegetable and hen inventory, adopted by the noodles, then cowl with a lid and simmer gently for 10 minutes.

Whereas the soup simmers, warmth the rice bran oil in a frying pan over a medium warmth and fry the halloumi slices on either side till golden brown. Put aside.

When the noodles have floated to the highest of the soup, it’s prepared. Serve with spinach leaves, halloumi, sesame seeds and a few additional recent spring onions.
